Ingredients

  • 1 cup Glutinous Rice Flour
  • 1/2 cup Sugar
  • 1 cup Water
  • 1/2 cup Red Bean Paste (Anko)
  • 1/4 cup Potato Starch

Instructions

  1. 1In a microwave-safe bowl, combine glutinous rice flour, sugar, and water.
  2. 2Mix well until smooth. Cover with plastic wrap and microwave for 2 minutes. Stir and microwave for another 1-2 minutes until translucent and sticky.
  3. 3Dust a clean surface with potato starch. Turn out the mochi dough onto the surface and let it cool slightly.
  4. 4Divide the mochi dough into small pieces. Flatten each piece and fill with red bean paste.
  5. 5Pinch the edges to seal and form a round ball. Dust with more potato starch to prevent sticking.
