Ingredients

  • 1 cup Red lentils
  • 2 cups Water
  • 1 medium Onion
  • 3 cloves Garlic
  • 2 tablespoons Berbere spice blend
  • 2 tablespoons Vegetable oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Turmeric
  • 1/4 cup All-purpose flour (gluten-free blend)
  • 2 tablespoons Vegetable broth

Instructions

  1. 1Rinse the red lentils in a fine-mesh sieve.
  2. 2In a pot, combine lentils, water, onion, garlic, berbere, vegetable oil, salt, and turmeric.
  3. 3Bring to a boil, then reduce heat and simmer for 20 minutes, or until lentils are very soft and most of the water is absorbed.
  4. 4Mash the lentils with a fork or potato masher until a thick paste forms. Stir in gluten-free flour.
  5. 5Let the mixture cool slightly, then form into small patties.
  6. 6Heat a small amount of vegetable oil in a skillet over medium heat.
  7. 7Pan-fry the patties for 3-4 minutes per side, or until golden brown and crispy.
  8. 8Serve warm with a drizzle of vegetable broth for added flavor.
