Dairy-Free Mexican Hot Chocolate Oatmeal

Ingredients

  • 1 cup Rolled Oats
  • 2 cups Almond Milk
  • 2 tbsp Unsweetened Cocoa Powder
  • 0.5 tsp Cinnamon
  • 0.125 tsp Chili Powder
  • 2 tbsp Maple Syrup
  • 2 tbsp Dairy-Free Chocolate Chips

Instructions

  1. 1Get a medium saucepan and add the 1 cup of rolled oats, 2 cups of almond milk, 2 tablespoons of unsweetened cocoa powder, 0.5 teaspoon of cinnamon, and 0.125 teaspoon of chili powder.
  2. 2Place the medium saucepan over medium-high heat. Bring the mixture to a boil, which means you'll see large bubbles rapidly rising to the surface. Once boiling, immediately reduce the heat to low, so the mixture is just gently bubbling. Let it simmer uncovered for 5 to 7 minutes, stirring occasionally, until the oatmeal reaches your preferred thickness. It should look thick and creamy.
  3. 3Remove the saucepan from the heat. Stir in the 2 tablespoons of maple syrup until it is fully combined with the oatmeal.
  4. 4Carefully pour the cooked oatmeal into two bowls. Sprinkle the 2 tablespoons of dairy-free chocolate chips over the top of the oatmeal in each bowl.
