Ingredients

  • 1.5 cups Pigeon peas, cooked
  • 1/2 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tsp Ginger, minced
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Cumin powder
  • 1/4 cup Coconut cream
  • 1/2 cup Breadcrumbs (gluten-free if needed)
  • 1 tbsp Coconut oil
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Instructions

  1. 1Heat coconut oil in a pan. Add onion and cook until softened.
  2. 2Add garlic, ginger, turmeric, and cumin, and cook for 1 minute.
  3. 3Add cooked pigeon peas, coconut cream, salt and pepper. Cook until heated through.
  4. 4Mash the mixture slightly. Stir in breadcrumbs.
  5. 5Form the mixture into small bites or patties.
  6. 6Bake at 375°F (190°C) for 20-25 minutes, until golden brown.
