Dairy-Free Maize and Millet Porridge (Kenyan Style)

Ingredients

  • 1/2 cup Maize Flour
  • 1/2 cup Millet Flour
  • 4 cups Water
  • 1 cup Coconut Milk
  • 2 tbsp Sugar
  • 1/4 tsp Salt
  • 1/4 tsp Cinnamon

Instructions

  1. 1In a medium saucepan, combine the 1/2 cup Maize Flour and the 1/2 cup Millet Flour. Gradually add 1 cup of Water, stirring continuously with a whisk or spoon until a smooth, lump-free paste forms.
  2. 2In a large heavy-bottomed pot, bring the remaining 3 cups of Water to a rolling boil over high heat (212°F / 100°C).
  3. 3Slowly pour the maize and millet flour paste from the saucepan into the boiling water in the large pot. Stir vigorously and constantly with a whisk or spoon for about 1-2 minutes to prevent any lumps from forming.
  4. 4Reduce the heat to low. Simmer the porridge for 25-30 minutes, stirring frequently. The porridge is done when it has thickened significantly and has a creamy, smooth consistency.
  5. 5Stir in the 1 cup Coconut Milk, 2 tbsp Sugar, 1/4 tsp Salt, and 1/4 tsp Cinnamon until all ingredients are well combined.
  6. 6Continue to cook the porridge on low heat for another 5 minutes, stirring occasionally. The porridge should be uniformly heated and the flavors fully blended.
  7. 7Serve the Dairy-Free Maize and Millet Porridge immediately while hot.
