Ingredients

  • 2 8oz Beef steak (sirloin or ribeye)
  • 2 large Eggs
  • 1 large Onion
  • 2 medium Potatoes
  • 2 cups Vegetable oil
  • 2 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Instructions

  1. 1Prepare the potatoes for frying: Wash and scrub the 2 medium potatoes. Cut them into 1/2-inch thick fries. Place them in a large heavy-bottomed pot. Add the 2 cups of vegetable oil, ensuring the fries are submerged. Heat the oil over medium-high heat until it reaches 350°F (175°C). Carefully add the potatoes to the hot oil and fry for 8-10 minutes, or until they are golden brown and crispy. Use a slotted spoon to remove the fries and place them on a plate lined with paper towels to drain. Set aside.
  2. 2Caramelize the onions: Peel and thinly slice the 1 large onion. Heat a 10-inch skillet over medium heat. Add the 2 tablespoons of olive oil. Once the oil is shimmering, add the sliced onions. Cook, stirring occasionally, for 15-20 minutes, or until the onions are soft, deeply golden brown, and sweet. Remove the caramelized onions from the skillet and set aside.
  3. 3Cook the steaks: Pat the 2 8oz Beef steaks dry with paper towels. Season both sides of the steaks with the 0.5 teaspoon of salt and the 0.25 teaspoon of black pepper. Wipe out the skillet used for the onions if necessary. Return the skillet to medium-high heat. Add a little more olive oil if the pan seems dry. Once the skillet is hot, carefully place the seasoned steaks in the pan. Sear for 3-5 minutes per side for medium-rare, or longer for your desired doneness. The internal temperature for medium-rare should be 130-135°F (54-57°C). Remove the steaks from the skillet and let them rest on a clean plate for 5 minutes before serving. Resting allows the juices to redistribute, keeping the steak moist.
  4. 4Fry the eggs: In the same skillet used for the steak, reduce the heat to medium. Add a little more olive oil if needed. Crack the 2 large eggs into the skillet. Cook for 2-3 minutes, or until the whites are set and the yolks are still runny, or to your preferred doneness. You can spoon some of the hot oil over the egg whites to help them cook faster.
  5. 5Assemble the dish: Place one cooked steak on each plate. Top each steak with one fried egg and a portion of the caramelized onions. Serve immediately with the prepared french fries on the side.
