Dairy-Free Locro Criollo

A hearty Argentine stew made with corn, beans, squash, and chorizo, adapted to be dairy and egg-free. Perfect for a cold evening.

Ingredients

  • 1 cup Dried White Corn
  • 1 cup Dried Great Northern Beans
  • 1 medium Butternut Squash
  • 1 lb Chorizo Sausage (Dairy-Free)
  • 1 large Onion
  • 4 cloves Garlic
  • 1 tbsp Smoked Paprika
  • 1 tsp Cumin
  • 8 cups Vegetable Broth
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

  1. 1The night before you plan to cook, place the 1 cup Dried White Corn and 1 cup Dried Great Northern Beans in separate large bowls. Cover each with plenty of water (at least 3 inches above the ingredients) and let them soak overnight at room temperature.
  2. 2The next day, drain and rinse the soaked corn and beans thoroughly. Peel the 1 medium Butternut Squash, remove the seeds, and cut it into 1-inch cubes. Finely chop the 1 large Onion and mince the 4 cloves Garlic.
  3. 3Place a large, heavy-bottomed pot over medium-high heat (375°F / 190°C). Add the 2 tablespoons of Olive Oil. Once the oil is shimmering, add the chopped 1 large Onion and cook, stirring occasionally, for 5 to 7 minutes, or until softened and translucent.
  4. 4Add the minced 4 cloves Garlic to the pot and cook for 1 minute more, until fragrant. Add the 1 lb Dairy-Free Chorizo Sausage, breaking it up with a spoon, and cook for 8 to 10 minutes, stirring frequently, until it is browned and cooked through.
  5. 5Stir in the drained and rinsed 1 cup Dried White Corn, the drained and rinsed 1 cup Dried Great Northern Beans, the 1-inch cubes of 1 medium Butternut Squash, 1 tablespoon Smoked Paprika, 1 teaspoon Cumin, 1 teaspoon Salt, and 1/2 teaspoon Black Pepper. Cook for 2 minutes, stirring constantly, until the spices are fragrant.
  6. 6Pour in the 8 cups of Vegetable Broth. Increase the heat to high and bring the mixture to a rolling boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer gently for 2 to 3 hours, or until the corn and beans are very tender and the squash has started to break down, thickening the stew. Stir occasionally to prevent sticking.
  7. 7Taste the stew and add more 1 teaspoon Salt or 1/2 teaspoon Black Pepper if needed. Serve hot.
