Dairy-Free Lecsó (Hungarian Vegetable Stew)

Ingredients

  • 2 large Yellow bell peppers
  • 4 medium Tomatoes
  • 1 medium Onion
  • 2 small Hungarian wax peppers
  • 2 cloves Garlic
  • 2 tbsp Olive oil
  • 1 tbsp Sweet paprika
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Instructions

  1. 1Slice bell peppers, tomatoes, and onion into strips.
  2. 2Mince garlic and finely chop Hungarian wax peppers.
  3. 3Heat olive oil in a large skillet over medium heat. Add onion and sauté until softened, about 5 minutes.
  4. 4Add garlic and Hungarian wax peppers. Cook for 1 minute.
  5. 5Add bell peppers and tomatoes. Cook for 15-20 minutes, or until vegetables are softened and slightly caramelized.
  6. 6Stir in sweet paprika, salt, and pepper. Cook for 5 more minutes.
