Ingredients

  • 2 large Yellow bell peppers
  • 2 large Red bell peppers
  • 1.5 lbs Tomatoes
  • 1 large Onion
  • 3 cloves Garlic
  • 1 tbsp Smoked paprika
  • 2 tbsp Olive oil
  • 0.75 tsp Salt
  • 0.25 tsp Black pepper

Instructions

  1. 1Slice bell peppers into strips. Chop tomatoes and onion. Mince garlic.
  2. 2Heat olive oil in a large skillet or pot over medium heat. Add chopped onion and sauté until softened, about 5 minutes. Add minced garlic and cook for 1 minute more.
  3. 3Add sliced bell peppers and cook until slightly softened, about 8-10 minutes.
  4. 4Stir in chopped tomatoes and smoked paprika. Bring to a simmer, then reduce heat and simmer for 20-25 minutes, or until tomatoes have broken down and the stew has thickened.
  5. 5Season with salt and pepper to taste.
  6. 6Serve hot as a side dish or over rice.
