Ingredients

  • 1 cup Brown or green lentils
  • 6 cups Water
  • 2 tbsp Olive oil
  • 1 medium Onion, chopped
  • 1 medium Carrot, chopped
  • 1 stalk Celery, chopped
  • 2 cloves Garlic, minced
  • 1 tsp Cumin
  • 1/2 tsp Turmeric
  • 1 tsp Salt
  • 1/4 tsp Black pepper
  • 1/4 cup Lemon juice
  • 1/4 cup Fresh cilantro, chopped

Instructions

  1. 1Rinse lentils in a fine-mesh sieve.
  2. 2In a large pot, heat olive oil over medium heat. Add onion, carrot, and celery and cook until softened, about 5-7 minutes.
  3. 3Add garlic, cumin, and turmeric and cook for 1 minute more.
  4. 4Add lentils and water to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes, or until lentils are tender.
  5. 5Stir in salt, pepper, and lemon juice.
  6. 6Serve hot, garnished with fresh cilantro.
