Dairy-Free Lebanese Chickpea Fatteh

A warm and comforting Lebanese breakfast dish made with layers of toasted pita bread, chickpeas, tahini sauce, and toasted pine nuts, all without any dairy or eggs.

Ingredients

  • 4 pieces Pita bread
  • 2 cans Canned chickpeas
  • 1/2 cup Tahini
  • 1/4 cup Lemon juice
  • 2 cloves Garlic
  • 1/4 cup Water
  • 2 tablespoons Olive oil
  • 1/4 cup Pine nuts
  • 1/4 cup Fresh parsley
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Cumin

Instructions

  1. 1Preheat oven to 350°F (175°C). Cut pita bread into small squares and toast in the oven for 10-12 minutes, or until crispy.
  2. 2In a saucepan, heat chickpeas over medium heat until warmed through.
  3. 3In a bowl, whisk together tahini, lemon juice, garlic, water, salt, and cumin to make the tahini sauce. Adjust consistency with more water if needed.
  4. 4In a separate pan, heat olive oil over medium heat. Add pine nuts and toast until golden brown.
  5. 5To assemble, layer toasted pita bread in a serving dish. Top with warm chickpeas, tahini sauce, and toasted pine nuts.
  6. 6Garnish with fresh parsley and serve immediately.
