Ingredients

  • 1 lb Ground lamb
  • 1 small Onion
  • 0.25 cup Parsley
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 0.5 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Tahini
  • 3 tablespoons Lemon juice
  • 2 cloves Garlic
  • 3 tablespoons Water

Instructions

  1. 1Preheat your grill to medium heat, aiming for a temperature of about 350°F (175°C).
  2. 2In a large bowl, combine the 1 lb Ground lamb. Grate the 1 small Onion finely and chop the 0.25 cup Parsley. Add the grated 1 small Onion, chopped 0.25 cup Parsley, 1 teaspoon Cumin, 1 teaspoon Coriander, 0.5 teaspoon Garlic powder, 1 teaspoon Salt, and 0.5 teaspoon Black pepper to the bowl. Use your hands to mix all ingredients together until they are well combined and uniform.
  3. 3Divide the meat mixture into 4 equal portions. Dampen your hands with water. Shape each portion into an elongated sausage shape, approximately 4 to 5 inches (10-13 cm) long. Carefully thread each shaped kofta onto a skewer.
  4. 4Place the kofta skewers directly onto the preheated grill. Grill for 10 to 15 minutes, turning them occasionally, until the kofta is browned on all sides and feels firm to the touch. Use a meat thermometer to ensure the internal temperature reaches 160°F (71°C).
  5. 5While the kofta is grilling, prepare the tahini sauce. Mince the 2 cloves Garlic. In a medium bowl, whisk together the 0.5 cup Tahini, 3 tablespoons Lemon juice, the minced 2 cloves Garlic, and 3 tablespoons Water until the sauce is smooth and creamy. If the sauce appears too thick, add 1 more tablespoon of water at a time, whisking after each addition, until it reaches a pourable, creamy consistency.
  6. 6Carefully remove the cooked kofta skewers from the grill. Place them on a clean plate or cutting board and let the kofta rest for 2 to 3 minutes. This resting period allows the juices to redistribute throughout the meat, resulting in more tender kofta.
  7. 7Serve the rested kofta immediately, with the prepared dairy-free tahini sauce served on the side.
