Dairy-Free Keto Chicken Alfredo with Zoodles

Ingredients

  • 4 medium Chicken breasts
  • 4 medium Zucchini
  • 2 tablespoons Olive oil
  • 3 cloves Garlic
  • 1 cup Coconut cream
  • 1/4 cup Nutritional yeast
  • 1/2 cup Chicken broth
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 tablespoon Lemon juice

Instructions

  1. 1Spiralize zucchini into noodles (zoodles). Set aside.
  2. 2Cut chicken breasts into bite-sized pieces. Season with salt and pepper.
  3. 3Heat olive oil in a large skillet over medium heat.
  4. 4Add chicken and cook until golden brown and cooked through.
  5. 5Add garlic and cook for 1 minute until fragrant.
  6. 6Pour in coconut cream and chicken broth. Bring to a simmer.
  7. 7Stir in nutritional yeast and lemon juice. Simmer for 5 minutes until the sauce thickens.
  8. 8Add zoodles to the skillet and toss to coat with the sauce. Cook for 2-3 minutes until zoodles are tender but still firm.
  9. 9Serve immediately.
