Dairy-Free Kenyan Chai Tea with Coconut Milk

Ingredients

  • 4 cups Water
  • 2 cups Coconut Milk
  • 4 bags Black Tea Bags
  • 6 pods Cardamom Pods
  • 1 stick Cinnamon Stick
  • 1 inch Fresh Ginger
  • 2-4 tbsp Sugar
  • 5 whole Black Peppercorns

Instructions

  1. 1In a medium saucepan, combine the 4 cups of Water, 6 crushed Cardamom Pods, 1 Cinnamon Stick, 1 inch piece of Fresh Ginger, and 5 whole Black Peppercorns.
  2. 2Place the saucepan over medium-high heat and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 5 minutes. You will smell the spices becoming fragrant.
  3. 3Add the 4 Black Tea Bags to the simmering liquid and continue to simmer for 3 more minutes. The liquid will start to turn a darker color.
  4. 4Carefully remove and discard the tea bags, cardamom pods, cinnamon stick, ginger, and black peppercorns from the saucepan. You can do this with a slotted spoon.
  5. 5Stir in the 2 cups of Coconut Milk and 2-4 tablespoons of Sugar. Adjust the sugar to your preference.
  6. 6Gently heat the mixture over low heat for 5-7 minutes, stirring occasionally. Do not let it come to a boil; you want it to be hot but not bubbling, around 160°F (71°C).
  7. 7Pour the hot chai tea into four mugs and serve immediately.
