Ingredients

  • 1 lb Smoked Sausage (Andouille)
  • 1 large Onion
  • 1 large Bell Pepper
  • 2 stalks Celery
  • 4 cloves Garlic
  • 2 tbsp Cajun Seasoning
  • 28 oz Diced Tomatoes
  • 4 cups Chicken Broth
  • 2 cups Long-Grain Rice
  • 1/4 cup Green Onions
  • 2 tbsp Olive Oil

Instructions

  1. 1Heat olive oil in a large pot or Dutch oven over medium heat.
  2. 2Add smoked sausage and cook until browned.
  3. 3Add onion, bell pepper, and celery and cook until softened, about 5-7 minutes.
  4. 4Add garlic and Cajun seasoning and cook for 1 minute more.
  5. 5Stir in diced tomatoes and chicken broth and bring to a boil.
  6. 6Add rice, reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked through and liquid is absorbed.
