Dairy-Free Irish Soda Bread Bites with Jam

Ingredients

  • 2 cups All-purpose flour
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1 cup Dairy-free milk
  • 1 tbsp Lemon juice
  • 4 tbsp Jam (strawberry, raspberry, etc.)

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2In a large bowl, combine the 2 cups of All-purpose flour, 1 tsp of Baking soda, and 1/2 tsp of Salt. Whisk these dry ingredients together until they are well mixed.
  3. 3In a separate small bowl or measuring cup, combine the 1 cup of Dairy-free milk and 1 tbsp of Lemon juice. Pour this wet mixture into the bowl with the dry ingredients.
  4. 4Using a spoon or spatula, mix the ingredients until they are just combined and no dry streaks of flour remain. Be careful not to overmix, as this can make the bread tough.
  5. 5Drop rounded spoonfuls of the dough onto an ungreased baking sheet, leaving about 1 inch (2.5 cm) of space between each bite.
  6. 6Bake for 20-25 minutes, or until the tops of the soda bread bites are golden brown and a skewer inserted into the center of a bite comes out clean.
  7. 7Allow the soda bread bites to cool slightly on the baking sheet for a few minutes before serving. Serve them warm or at room temperature, with the 4 tbsp of Jam on the side or dolloped on top of each bite.
