Ingredients

  • 4 cups All-Purpose Flour
  • 2.25 teaspoons Active Dry Yeast
  • 0.5 cup Sugar
  • 1 teaspoon Salt
  • 1 cup Plant-Based Milk (Soy or Oat)
  • 2 large Eggs
  • 0.25 cup Vegetable Oil
  • 1 cup Poppy Seeds
  • 0.25 cup Honey

Instructions

  1. 1In a large bowl, whisk together 4 cups of All-Purpose Flour, 2.25 teaspoons of Active Dry Yeast, 0.5 cup of Sugar, and 1 teaspoon of Salt.
  2. 2In a separate medium bowl, gently warm 1 cup of Plant-Based Milk until it feels lukewarm to the touch (around 105-115°F or 40-46°C). Stir in 2 large Eggs and 0.25 cup of Vegetable Oil until just combined.
  3. 3Pour the wet ingredients from the medium bowl into the large bowl with the dry ingredients. Mix with a spoon or your hands until a shaggy dough begins to form.
  4. 4Turn the dough out onto a clean surface that has been lightly dusted with a little of the All-Purpose Flour. Knead the dough for 5-7 minutes, or until it feels smooth and elastic. Add a tiny bit more flour if it's too sticky to handle.
  5. 5Lightly grease a clean large bowl with a little of the Vegetable Oil. Place the kneaded dough into the greased bowl, turning it over once to coat the top. Cover the bowl with a clean kitchen towel or plastic wrap and let it rest in a warm place for 1 hour, or until it has doubled in size.
  6. 6While the dough is rising, combine 1 cup of Poppy Seeds and 0.25 cup of Honey in a small saucepan. Cook over low heat, stirring occasionally, for about 5 minutes, or until the honey has been absorbed by the poppy seeds. Remove from heat and let cool slightly.
  7. 7Once the dough has doubled, gently punch it down to release the air. Turn the dough out onto a lightly floured surface and divide it into two equal pieces. Roll each piece into a rectangle about 8x10 inches.
  8. 8Spread the cooled poppy seed mixture evenly over the surface of each dough rectangle, leaving a small border along the edges. Tightly roll up each rectangle, starting from a long side, to form a log. Place the two rolled logs side by side in a greased loaf pan (approximately 9x5 inches). Cover the pan and let the dough rise for another 30 minutes.
  9. 9Preheat your oven to 350°F (175°C). Place the loaf pan in the preheated oven and bake for 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  10. 10Remove the bread from the loaf pan and let it cool completely on a wire rack for at least 1 hour before slicing and serving. This ensures the inside is fully set.
