Ingredients

  • 4 pieces Chicken Thighs
  • 2 cups Jasmine Rice
  • 4 cups Chicken Broth (dairy-free)
  • 2 inches Ginger
  • 4 cloves Garlic
  • 2 stalks Scallions
  • 2 tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • 1 optional Chili
  • 1 tbsp Lime Juice

Instructions

  1. 1In a pot, combine chicken thighs, ginger slices, and scallions. Cover with water and bring to a boil. Reduce heat and simmer for 20-25 minutes, or until chicken is cooked through.
  2. 2Remove chicken from pot and set aside to cool. Reserve the chicken broth.
  3. 3Rinse jasmine rice. In the same pot, combine rice with the reserved chicken broth. Add sliced ginger and garlic cloves. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed.
  4. 4While rice is cooking, shred the cooked chicken into bite-sized pieces.
  5. 5To make the dipping sauce, mince ginger, garlic, and chili (if using). Combine with soy sauce, sesame oil, and lime juice.
  6. 6Once the rice is cooked, let it cool slightly. Using wet hands, mold the rice into small balls.
  7. 7Serve the rice balls with shredded chicken and the dipping sauce.
