Dairy-Free Griesmeelpap (Semolina Pudding)

A creamy Dutch semolina pudding, traditionally made with milk. This version uses coconut milk for a rich, dairy-free alternative.

Ingredients

  • 4 cups Coconut milk (full-fat)
  • 1/2 cup Semolina (griesmeel)
  • 1/4 cup Sugar
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Cinnamon

Instructions

  1. 1Place a medium saucepan on the stove. Pour the 4 cups of full-fat coconut milk into the saucepan. Heat the coconut milk over medium heat (approximately 300°F / 150°C) until it just begins to simmer, with small bubbles forming around the edges of the pan.
  2. 2Once the coconut milk is simmering, gradually whisk in the 1/2 cup of semolina, 1/4 cup of sugar, 1 teaspoon of vanilla extract, and 1/4 teaspoon of salt. Continue whisking for 1 minute to ensure no lumps form. Immediately reduce the heat to low (approximately 200°F / 95°C).
  3. 3Continue to cook the mixture over low heat, stirring constantly with a whisk or spoon, for 10 to 15 minutes. The pudding is done when it has thickened considerably and coats the back of a spoon, leaving a clear path when you draw your finger across it.
  4. 4Carefully pour the warm griesmeelpap into four individual serving bowls. Sprinkle each serving evenly with the 1/2 teaspoon of cinnamon. Serve immediately while warm.
