Ingredients

  • 4 cups Potatoes, peeled and cubed
  • 1 pound Smoked Sausage (Knackwurst or Kielbasa), sliced
  • 1 medium Onion, chopped
  • 6 cups Vegetable Broth
  • 4 ounces Dairy-Free Cream Cheese
  • 1 tablespoon Dijon Mustard
  • 2 tablespoons Fresh Parsley, chopped
  • To taste Salt and Pepper

Instructions

  1. 1In a large pot, sauté the onion until softened.
  2. 2Add the sliced smoked sausage and cook until lightly browned.
