Ingredients

  • 6 medium Potatoes, peeled and diced
  • 1 lb Smoked Sausage (dairy/nut-free)
  • 1 large Onion, diced
  • 2 cloves Garlic, minced
  • 6 cups Vegetable Broth
  • 1 can Coconut Milk (full-fat)
  • 2 tbsp Dijon Mustard
  • 1/4 cup Fresh Parsley, chopped
  • to taste Salt and Pepper

Instructions

  1. 1In a large pot, sauté the diced onion and garlic until softened.
