Ingredients

  • 1.5 lb Potatoes, peeled and diced
  • 1 lb Smoked Sausage, sliced
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 6 cups Vegetable Broth
  • 1 can Coconut Milk (full-fat)
  • 1 tbsp Dijon Mustard
  • 2 tbsp Fresh Parsley, chopped
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Instructions

  1. 1In a large pot, brown the sliced smoked sausage over medium heat. Remove and set aside.
  2. 2Add diced onion to the pot and cook until softened, about 5 minutes. Add minced garlic and cook for another minute.
  3. 3Add diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the potatoes are tender.
  4. 4Stir in the coconut milk and Dijon mustard. Heat through.
  5. 5Return the smoked sausage to the pot. Season with salt and pepper to taste.
  6. 6Garnish with fresh parsley before serving.
