Ingredients

  • 2 Apples, peeled, cored, and sliced
  • 1 cup All-Purpose Flour
  • 3 Eggs
  • 1 cup Dairy-Free Milk (Soy or Oat)
  • 2 tbsp Sugar
  • 1 tsp Vanilla Extract
  • 1/2 tsp Cinnamon
  • 1 tbsp Dairy-Free Butter (for greasing)
  • 2 tbsp Powdered Sugar (for dusting)

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2Melt the 1 tablespoon of dairy-free butter in a 9-inch oven-safe skillet over medium heat.
  3. 3Arrange the 2 sliced apples in a single layer in the bottom of the skillet with the melted dairy-free butter.
  4. 4In a medium bowl, whisk together the 1 cup of all-purpose flour, 3 eggs, 1 cup of dairy-free milk, 2 tablespoons of sugar, 1 teaspoon of vanilla extract, and 1/2 teaspoon of cinnamon until the mixture is smooth and there are no lumps.
  5. 5Carefully pour the batter evenly over the apple slices in the skillet.
  6. 6Place the skillet in the preheated oven and bake for 25-30 minutes. The pancake is done when it is golden brown and has puffed up significantly.
  7. 7Carefully remove the skillet from the oven and dust the top generously with the 2 tablespoons of powdered sugar before serving.
