Ingredients

  • 3 medium Apples
  • 4 tablespoons Dairy-Free Butter
  • 2 tablespoons Sugar
  • 1 cup All-Purpose Flour
  • 1 cup Dairy-Free Milk (Oat or Soy)
  • 3 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Cinnamon
  • 2 tablespoons Powdered Sugar

Instructions

  1. 1Preheat your oven to 425°F (220°C). While the oven preheats, peel, core, and slice the 3 medium Apples into 1/4-inch thick pieces.
  2. 2Place a large oven-safe skillet (such as a 10-inch or 12-inch cast iron skillet) over medium heat. Add the 4 tablespoons of Dairy-Free Butter and allow it to melt completely.
  3. 3Once the butter is melted, add the sliced 3 medium Apples and the 2 tablespoons of Sugar to the skillet. Cook for 8-10 minutes, stirring occasionally, until the apples are softened and have turned a light golden brown, indicating they are caramelized.
  4. 4While the apples cook, combine the 1 cup of All-Purpose Flour, 1 cup of Dairy-Free Milk (Oat or Soy), 3 large Eggs, and 1 teaspoon of Vanilla Extract in a blender. Blend on high speed for 30-60 seconds until the batter is completely smooth and free of lumps.
  5. 5Carefully pour the smooth batter directly over the caramelized apples in the hot skillet. Evenly sprinkle the 1/2 teaspoon of Cinnamon over the batter.
  6. 6Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the pancake is significantly puffed up, golden brown around the edges, and set in the center.
  7. 7Once baked, carefully remove the skillet from the oven. Immediately dust the top of the hot pancake with the 2 tablespoons of Powdered Sugar and serve warm.
