Ingredients

  • 1 cup All-purpose flour
  • 3 large Eggs
  • 1 cup Coconut milk
  • 2 tablespoons Sugar
  • 1 teaspoon Vanilla extract
  • 2 medium Apples
  • 1 teaspoon Cinnamon
  • 2 tablespoons Dairy-free butter
  • 2 tablespoons Powdered sugar

Instructions

  1. 1Preheat oven to 425°F (220°C).
  2. 2In a large bowl, whisk together flour, eggs, coconut milk, sugar, and vanilla extract until smooth.
  3. 3Peel, core, and slice apples.
  4. 4Melt dairy-free butter in a large oven-safe skillet (cast iron preferred) over medium heat. Add apple slices and cook until slightly softened, about 5 minutes. Sprinkle with cinnamon.
  5. 5Pour the batter over the apples in the skillet. Transfer the skillet to the oven and bake for 20-25 minutes, or until the pancake is puffed and golden brown.
  6. 6Dust with powdered sugar and serve immediately.
