Ingredients

  • 3 large Ripe Plantains
  • 1/2 cup Vegetable Oil
  • 2 medium Avocado
  • 1/4 cup Red Onion
  • 1 medium Tomato
  • 2 tbsp Lime Juice
  • 1/4 cup Cilantro
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Peel the 3 large Ripe Plantains and slice them diagonally into approximately 1.27 cm thick pieces.
  2. 2Pour the 1/2 cup Vegetable Oil into a 30.48 cm skillet and heat it over medium heat until it shimmers, about 175°C.
  3. 3Carefully place the plantain slices into the hot oil in a single layer, working in batches if necessary to avoid overcrowding the skillet. Fry the plantains for 3-4 minutes per side, until they are golden brown and caramelized. Use a slotted spoon to remove the fried plantains from the skillet and place them on a plate lined with paper towels to drain.
  4. 4While the plantains are frying, prepare the avocado salsa. Dice the 2 medium Avocados, the 1/4 cup Red Onion, and the 1 medium Tomato into small, bite-sized pieces.
  5. 5Chop the 1/4 cup Cilantro.
  6. 6In a medium bowl, combine the diced avocado, red onion, and tomato with the chopped cilantro. Add the 2 tablespoons Lime Juice, 1/4 teaspoon Salt, and 1/4 teaspoon Black Pepper. Gently mix all the ingredients together until just combined.
  7. 7Arrange the fried plantains on a serving platter and spoon the avocado salsa over them, or serve the salsa in a separate bowl alongside the plantains.
