Dairy-Free French Onion Soup

Ingredients

  • 3 lbs Yellow onions, thinly sliced
  • 2 tbsp Olive oil
  • 8 cups Vegetable broth
  • 1 cup Dry red wine (optional)
  • 1 leaf Bay leaf
  • 2 sprigs Thyme sprigs
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 8 slices Baguette slices
  • 1/4 cup Dairy-free parmesan alternative, shredded (optional)

Instructions

  1. 1Place a large pot or Dutch oven on the stove. Add the 2 tbsp of olive oil and heat it over medium heat (approximately 300-325°F / 150-160°C) for 1 minute. Add the 3 lbs of thinly sliced yellow onions to the pot and cook, stirring frequently, for 30-40 minutes, until the onions are deeply golden brown, very soft, and have a sweet, rich aroma.
  2. 2Carefully pour the 8 cups of vegetable broth and, if you are using it, the 1 cup of dry red wine into the pot with the caramelized onions. Add the 1 bay leaf and the 2 thyme sprigs. Increase the heat to medium-high (approximately 350-375°F / 175-190°C) and bring the mixture to a gentle simmer, where small bubbles consistently break the surface. Once simmering, reduce the heat to low (approximately 175-200°F / 80-95°C) and let it simmer gently for 15 minutes. The soup will become fragrant, and the flavors will meld together.
  3. 3Remove the 1 bay leaf and the 2 thyme sprigs from the soup. Stir in the 1 tsp of salt and the 1/2 tsp of black pepper. While the soup is still warm, preheat your oven broiler to its highest setting (approximately 500-550°F / 260-290°C). Place the 8 slices of baguette on a baking sheet.
  4. 4Carefully place the baking sheet with the 8 baguette slices under the preheated broiler. Broil for 1-3 minutes, watching constantly, until the baguette slices are lightly golden brown and crisp. Remove the baking sheet from the oven.
  5. 5Carefully ladle the hot soup into four individual oven-safe bowls. Place two toasted baguette slices on top of the soup in each bowl. If you are using it, sprinkle the 1/4 cup of shredded dairy-free parmesan alternative evenly over the baguette slices in each bowl. Carefully place the bowls under the preheated broiler for 1-2 minutes, watching closely, until the dairy-free parmesan alternative is melted and bubbly.
