Ingredients

  • 4 large Yellow onions (thinly sliced)
  • 2 tablespoons Olive oil
  • 6 cups Vegetable broth
  • 1/2 cup Dry sherry
  • 2 sprigs Fresh thyme sprigs
  • 1 leaf Bay leaf
  • to taste Salt and pepper
  • 8 slices Dairy-free baguette slices
  • 1 cup Vegan mozzarella cheese (shredded)

Instructions

  1. 1Place a large, heavy-bottomed pot or Dutch oven on the stove and heat 2 tablespoons of olive oil over medium heat (350°F / 175°C). Add the 4 large yellow onions, thinly sliced, and cook, stirring occasionally, for 30 to 40 minutes, until they are deeply caramelized and soft. If the onions start to stick or burn, reduce the heat to medium-low (300°F / 150°C).
  2. 2Pour the 1/2 cup of dry sherry into the pot with the caramelized onions. Use a wooden spoon to scrape up any browned bits stuck to the bottom of the pot. Let this cook for 2 to 3 minutes, allowing the alcohol to evaporate slightly.
  3. 3Add the 6 cups of vegetable broth, 2 sprigs of fresh thyme, and 1 bay leaf to the pot. Increase the heat to medium-high (400°F / 200°C) and bring the soup to a gentle simmer. Once simmering, reduce the heat to low (200°F / 95°C), cover the pot, and let it simmer for 15 to 20 minutes so the flavors can blend together.
  4. 4While the soup simmers, preheat your broiler. Arrange the 8 slices of dairy-free baguette on a baking sheet. Place the baking sheet under the broiler for 1 to 2 minutes, watching carefully, until the bread slices are lightly toasted.
  5. 5Remove the thyme sprigs and bay leaf from the soup. Season the soup with salt and pepper to your preference. Ladle the hot soup into 4 oven-safe bowls.
  6. 6Place 2 slices of the toasted dairy-free baguette on top of the soup in each bowl. Sprinkle the 1 cup of shredded vegan mozzarella cheese evenly over the baguette slices in each bowl.
  7. 7Carefully place the filled bowls back under the broiler. Broil for 2 to 3 minutes, watching constantly, until the vegan mozzarella cheese is completely melted and bubbly.
  8. 8Serve the French onion soup immediately.
