Ingredients

  • 4 pieces Injera
  • 1 medium Red Onion
  • 2 medium Tomato
  • 3 tablespoons Vegan Butter
  • 2 tablespoons Berbere Spice Blend
  • 2 cloves Garlic
  • 1/4 cup Water
  • 1/2 teaspoon Salt

Instructions

  1. 1Shred the injera into bite-sized pieces. Set aside.
  2. 2Dice the red onion and tomato. Mince the garlic.
  3. 3In a large skillet, melt the vegan butter over medium heat.
  4. 4Add the red onion and sauté until softened, about 5 minutes.
  5. 5Add the garlic and berbere spice blend and cook for another minute until fragrant.
  6. 6Stir in the diced tomato and water. Bring to a simmer and cook until the tomatoes soften, about 5 minutes.
  7. 7Add the shredded injera to the skillet and stir well to combine. Cook for about 5-7 minutes, or until the injera is heated through and has absorbed the sauce.
  8. 8Season with salt to taste. Serve immediately.
