Ingredients

  • 1.5 lb Salmon fillet
  • 1 lb Potatoes
  • 1 Onion
  • 2 Carrots
  • 1 can Coconut milk
  • 6 cups Fish broth
  • 2 Bay leaves
  • 6 Allspice berries
  • 0.25 cup Fresh dill
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1Cut the 1.5 lb salmon fillet into 1-inch cubes.
  2. 2Peel and dice the 1 lb potatoes, 1 onion, and 2 carrots into roughly 1/2-inch pieces.
  3. 3In a large pot, combine the 6 cups of fish broth, the diced potatoes, the diced onion, the diced carrots, the 2 bay leaves, and the 6 allspice berries.
  4. 4Bring the mixture in the large pot to a rolling boil over high heat, then reduce the heat to low. Cover and simmer for 15 minutes, or until the potatoes are easily pierced with a fork.
  5. 5Add the 1.5 lb salmon cubes and the 1 can of coconut milk to the pot. Increase the heat to medium and simmer gently for 5-7 minutes, or until the salmon is opaque and flakes easily with a fork. The internal temperature of the salmon should reach 145°F (63°C).
  6. 6Stir in the 0.25 cup of fresh dill, the 1 tsp of salt, and the 0.5 tsp of black pepper.
  7. 7Carefully remove and discard the 2 bay leaves and the 6 allspice berries from the soup before serving. Serve the Dairy-Free Finnish Salmon Soup hot.
