Dairy-Free Fava Dip with Pita Chips

This creamy and flavorful fava bean dip is a delicious dairy-free alternative to traditional dips. Served with baked pita chips for a satisfying snack.

Ingredients

  • 1 lb Fava Beans
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 1/4 cup Olive Oil
  • 2 tbsp Lemon Juice
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 4 pieces Pita Bread

Instructions

  1. 1Soak fava beans in water for at least 4 hours or overnight.
  2. 2Drain and rinse the fava beans.
  3. 3Sauté chopped onion and garlic in olive oil until softened.
  4. 4Add fava beans to the pan and cover with water. Simmer for 20-25 minutes, or until beans are tender.
  5. 5Drain the beans, reserving some cooking liquid.
  6. 6In a food processor, combine the beans, sautéed onion and garlic, olive oil, lemon juice, salt, and pepper. Add cooking liquid as needed to reach desired consistency.
  7. 7Preheat oven to 350°F (175°C). Cut pita bread into triangles, brush with olive oil, and bake for 8-10 minutes, or until crispy.
  8. 8Serve fava dip with pita chips.
