Dairy-Free Fava Bean Puree with Pita Bread (Fava)

Ingredients

  • 1 cup Yellow split peas
  • 3 cups Water
  • 1/2 medium Onion, chopped
  • 1/4 cup Olive oil
  • 2 tablespoons Lemon juice
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 4 pieces Pita bread

Instructions

  1. 1Rinse the yellow split peas in a colander.
  2. 2In a pot, combine the split peas, water, and chopped onion. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the peas are very soft and have absorbed most of the water.
  3. 3Remove from heat and let cool slightly.
  4. 4Transfer the mixture to a blender or food processor and blend until smooth.
  5. 5Stir in olive oil, lemon juice, salt, and pepper.
  6. 6Serve warm with pita bread.
