Ingredients

  • 1 cup Chickpea Flour (Shiro)
  • 2 cups Water
  • 2 tablespoons Olive Oil
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 teaspoon Ginger
  • 2 tablespoons Berbere Spice Blend
  • 1/2 teaspoon Turmeric Powder
  • 1/2 teaspoon Salt
  • 1 tablespoon Vegan Butter (for richness)(replaces Butter)
  • 1/2 cup Vegetable Broth

Instructions

  1. 1Heat olive oil in a pot over medium heat. Add chopped onion and sauté until softened.
  2. 2Add minced garlic and ginger and cook for another minute until fragrant.
  3. 3Stir in berbere spice blend, turmeric powder, and salt. Cook for one minute, stirring constantly.
  4. 4Gradually whisk in water to avoid lumps. Bring to a simmer.
  5. 5Stir in chickpea flour and vegan butter. Reduce heat to low and simmer for 20-25 minutes, stirring occasionally, until the stew thickens.
  6. 6Add vegetable broth for desired consistency.
  7. 7Serve hot with injera bread (dairy-free).
