Ingredients

  • 2 cans (20 oz) Canned young green jackfruit
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 tbsp Chili powder
  • 1 tsp Cumin
  • 2 tbsp Olive oil
  • 2 cups Green enchilada sauce
  • 12 small Corn tortillas
  • 1 cup Dairy-free shredded cheese (mozzarella style)
  • 0.25 cup Cilantro

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2In a large skillet, heat olive oil over medium heat. Add onion and garlic and cook until softened.
  3. 3Add shredded jackfruit, chili powder, and cumin. Cook for 5-7 minutes, stirring occasionally, until jackfruit is slightly browned and heated through.
  4. 4Warm corn tortillas slightly to make them more pliable. Dip each tortilla in the green enchilada sauce and fill with the jackfruit mixture. Roll up tightly and place seam-down in a baking dish.
  5. 5Pour the remaining green enchilada sauce over the enchiladas. Sprinkle with dairy-free shredded cheese.
  6. 6Bake for 20-25 minutes, or until heated through and the dairy-free cheese is melted and bubbly.
  7. 7Garnish with cilantro before serving.
