Ingredients

  • 1 cup Red lentils
  • 1 medium Onion
  • 1 medium Carrot
  • 1 medium Potato
  • 2 cloves Garlic
  • 6 cups Vegetable broth
  • 2 tbsp Olive oil
  • 1 tsp Cumin powder
  • 0.5 tsp Turmeric powder
  • 0.25 tsp Chili powder
  • 1 tbsp Lemon juice
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh cilantro, chopped

Instructions

  1. 1Rinse the 1 cup of red lentils thoroughly under cold running water until the water runs clear. Set aside.
  2. 2Peel and dice the 1 medium carrot into 1/2-inch cubes. Peel and dice the 1 medium potato into 1/2-inch cubes. Peel and dice the 1 medium onion into 1/2-inch pieces. Peel and mince the 2 cloves of garlic.
  3. 3Heat the 2 tablespoons of olive oil in a large, heavy-bottomed pot over medium heat, about 300°F (150°C). Add the diced 1 medium onion and cook, stirring occasionally, for 5-7 minutes, or until the onion is softened and turns golden brown.
  4. 4Add the minced 2 cloves of garlic to the pot and cook for 1 minute more, stirring constantly, until fragrant. Be careful not to burn the garlic.
  5. 5Add the diced 1 medium carrot and the diced 1 medium potato to the pot. Cook, stirring occasionally, for 5 minutes until they begin to soften slightly.
  6. 6Add the rinsed 1 cup of red lentils, 6 cups of vegetable broth, 1 teaspoon of cumin powder, 0.5 teaspoon of turmeric powder, 0.25 teaspoon of chili powder, 1 teaspoon of salt, and 0.5 teaspoon of black pepper to the pot. Stir everything together and bring the mixture to a boil over high heat.
  7. 7Once boiling, reduce the heat to low, cover the pot, and let the soup simmer for 30-40 minutes. The soup is ready when the 1 cup of red lentils are very soft and the 1 medium carrot and 1 medium potato are tender when pierced with a fork.
  8. 8Carefully use an immersion blender to blend the soup directly in the pot until it reaches a creamy consistency. You can blend it completely smooth or leave some texture, as desired. Stir in the 1 tablespoon of lemon juice.
  9. 9Serve the soup hot, garnished with the 2 tablespoons of fresh cilantro, chopped.
