Ingredients

  • 1 cup Rolled oats
  • 2 cups Plant-based milk (almond, soy, or oat)
  • 4 pitted Medjool dates
  • 2 tablespoons Tahini
  • 1/2 teaspoon Vanilla extract
  • 1/8 teaspoon Pinch of salt
  • 2 tablespoons Chopped walnuts

Instructions

  1. 1In a saucepan, combine rolled oats and plant-based milk. Bring to a simmer over medium heat.
  2. 2Reduce heat and cook for 10-12 minutes, stirring occasionally, until the oats are soft and the porridge has thickened.
  3. 3While the oats are cooking, finely chop the dates.
  4. 4Stir in the chopped dates, tahini, vanilla extract, and salt. Cook for another 2 minutes, until the dates are softened.
  5. 5Pour the porridge into serving bowls. Top with chopped walnuts and serve warm.
