Ingredients

  • 1 cup Dried fava beans
  • 1/2 medium Onion
  • 4 cloves Garlic
  • 1/4 cup Fresh cilantro
  • 1/4 cup Fresh parsley
  • 1 teaspoon Cumin
  • 1/2 teaspoon Coriander
  • 1/2 teaspoon Baking soda
  • 1 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 2 cups Vegetable oil

Instructions

  1. 1Soak fava beans in water for at least 24 hours, changing the water several times.
  2. 2Drain the soaked fava beans and place them in a food processor.
  3. 3Add onion, garlic, cilantro, parsley, cumin, coriander, baking soda, salt, and pepper to the food processor.
  4. 4Process until the mixture is finely ground but not a paste. A little texture is desirable.
  5. 5Form the mixture into small patties or balls.
  6. 6Heat vegetable oil in a deep pot or fryer to 350°F (175°C).
  7. 7Fry the falafel for 3-5 minutes, until golden brown and crispy.
  8. 8Remove the falafel from the oil and drain on paper towels.
  9. 9Serve hot in lettuce cups with tahini sauce, chopped vegetables, and pickles.
