Ingredients

  • 1.5 cups Red Lentils
  • 6 cups Vegetable Broth
  • 1 can Coconut Milk (full-fat)
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 4 cloves Garlic
  • 1 tablespoon Cumin
  • 1 teaspoon Turmeric
  • 1 teaspoon Coriander
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Instructions

  1. 1Rinse the red lentils thoroughly.
  2. 2Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  3. 3Add garlic, cumin, turmeric, and coriander and cook for 1 minute more, until fragrant.
  4. 4Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the lentils are tender.
  5. 5Stir in the coconut milk and lemon juice. Season with salt and pepper to taste.
  6. 6Serve hot, garnished with fresh parsley (optional).
