Dairy-Free Egyptian Lentil Soup (Adas)

A hearty and flavorful Egyptian lentil soup made with red lentils, vegetables, and warming spices. This version is completely dairy-free.

Ingredients

  • 1.5 cups Red lentils
  • 6 cups Vegetable broth
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalks Celery
  • 3 cloves Garlic
  • 1 teaspoon Cumin
  • 0.5 teaspoon Turmeric
  • 2 tablespoons Lemon juice
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Instructions

  1. 1Rinse the red lentils in a fine-mesh sieve.
  2. 2Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery and sauté until softened, about 5-7 minutes.
  3. 3Add garlic, cumin, and turmeric and cook for 1 minute more.
  4. 4Stir in the red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the lentils are tender.
  5. 5Use an immersion blender to partially blend the soup for a creamier texture. Alternatively, you can transfer a portion of the soup to a regular blender and blend until smooth, then return it to the pot.
  6. 6Stir in lemon juice, salt, and pepper. Serve hot.
