Ingredients

  • 1 cup Dried Fava Beans
  • 6 cups Water
  • 4 cloves Garlic
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Olive Oil
  • 1 teaspoon Cumin
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 3 tablespoons Tahini
  • 2-3 tablespoons Water (for tahini)
  • 2 tablespoons Chopped Parsley

Instructions

  1. 1Soak the fava beans in water overnight.
  2. 2Drain the fava beans and place them in a pot with 6 cups of fresh water.
  3. 3Bring to a boil, then reduce heat and simmer for 1.5-2 hours, or until the beans are very tender.
  4. 4While the beans are cooking, prepare the tahini dressing by whisking together tahini, lemon juice, water, and a pinch of salt until smooth and creamy. Add more water if needed to achieve desired consistency.
  5. 5Once the beans are cooked, mash them slightly with a fork.
  6. 6In a separate pan, sauté minced garlic in olive oil until fragrant.
  7. 7Add the sautéed garlic, cumin, paprika, salt, and pepper to the mashed fava beans. Stir well.
  8. 8Serve hot, topped with the tahini dressing and chopped parsley.
