Ingredients

  • 1 large Eggplant
  • 1/4 cup Olive oil
  • 4 large Pita bread
  • 1 cup Hummus
  • 1/2 cup Tahini sauce
  • 2 medium Potatoes
  • 1 block Firm tofu
  • 1/2 tsp Turmeric
  • 1/4 tsp Black salt (Kala Namak)
  • 1 tbsp Lemon juice
  • 1 cup Israeli salad (cucumber, tomato, onion)

Instructions

  1. 1Slice eggplant into 1/4-inch thick rounds. Brush with olive oil and pan fry until golden brown.
  2. 2Boil potatoes until tender. Slice into rounds.
  3. 3Press and cube tofu. Marinate in turmeric, black salt, and lemon juice. Pan fry until golden. The black salt provides an eggy flavor.
  4. 4Warm pita bread.
  5. 5Spread hummus on one side of the pita, tahini on the other.
  6. 6Layer with fried eggplant, potato slices, marinated tofu, and Israeli salad.
  7. 7Serve immediately.
