Ingredients

  • 250 g All-purpose flour
  • 50 g Tapioca starch
  • 50 g Sugar
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/4 tsp Salt
  • 350 ml Unsweetened almond milk
  • 1 tsp Vanilla extract
  • 2 tbsp Melted coconut oil
  • 2 tbsp Sugar (for topping)
  • 2 tbsp Chocolate sprinkles (for topping)
  • 2 tbsp Roasted peanuts, crushed (for topping)

Instructions

  1. 1In a large bowl, whisk together flour, tapioca starch, sugar, baking powder, baking soda, and salt.
  2. 2Gradually whisk in almond milk until smooth. Stir in vanilla extract and melted coconut oil.
  3. 3Let the batter rest for 30 minutes.
  4. 4Heat a lightly oiled non-stick skillet or pancake pan over medium heat.
  5. 5Pour about 1/2 cup of batter onto the hot skillet. Cook until bubbles start to form on the surface and the edges look set.
  6. 6Sprinkle sugar over the pancake.
  7. 7Cover the skillet and cook for another 2-3 minutes, or until the pancake is cooked through.
  8. 8Remove from skillet and spread with dairy-free margarine, then sprinkle with chocolate sprinkles and crushed peanuts. Fold in half and serve immediately.
