Ingredients

  • 1 cup Stone-ground grits
  • 3 cups Unsweetened coconut milk
  • 1 cup Vegetable broth
  • 2 tablespoons Vegan butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 pound Shrimp (peeled and deveined)
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons Vegan butter
  • 0.5 cup Green bell pepper (diced)
  • 0.5 cup Red bell pepper (diced)
  • 0.5 cup Onion (diced)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Scallions (chopped)

Instructions

  1. 1In a saucepan, bring coconut milk and vegetable broth to a boil. Whisk in grits, then reduce heat and simmer for 20-25 minutes, stirring frequently, until thickened and creamy. Stir in vegan butter, salt, and pepper.
  2. 2While grits are cooking, toss shrimp with Cajun seasoning.
  3. 3In a skillet, melt vegan butter over medium heat. Add bell peppers, onion, and garlic and sauté until softened, about 5-7 minutes.
  4. 4Add shrimp to the skillet and cook until pink and opaque, about 3-5 minutes.
  5. 5Serve shrimp and vegetable mixture over grits, garnished with scallions.
