Ingredients

  • 1 lb Ground turkey
  • 1 cup Long-grain rice
  • 2 cups Chicken broth
  • 1 medium Onion
  • 1 medium Bell pepper (green)
  • 2 stalks Celery
  • 3 cloves Garlic
  • 2 tbsp Cajun seasoning
  • 1 tbsp Worcestershire sauce
  • 1 tsp Hot sauce
  • 2 tbsp Olive oil
  • 4 oz Chicken liver (optional)
  • 2 tbsp Dairy-free butter substitute

Instructions

  1. 1Heat 2 tablespoons of olive oil in a large 12-inch skillet over medium-high heat, about 400°F (200°C).
  2. 2Add the 1 lb of ground turkey to the hot skillet. Cook, breaking it up into small pieces with a spoon, until it is browned all over, about 5-7 minutes. Drain off any excess fat from the skillet.
  3. 3Add the 1 medium onion, 1 medium green bell pepper, and 2 stalks of celery to the skillet. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes. Add the 3 cloves of garlic and cook for 1 minute more, until fragrant.
  4. 4If you are using the 4 oz of chicken liver, add it now. Cook, stirring occasionally, until it is browned all over, about 3-5 minutes.
  5. 5Stir in the 1 cup of long-grain rice, 2 cups of chicken broth, 2 tablespoons of Cajun seasoning, 1 tablespoon of Worcestershire sauce, and 1 teaspoon of hot sauce. Stir everything together until the rice is coated.
  6. 6Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet tightly with a lid, and let it simmer for 20 minutes, or until the rice is tender and all the liquid has been absorbed. You can check if the rice is done by tasting a few grains.
  7. 7Remove the skillet from the heat. Stir in the 2 tablespoons of dairy-free butter substitute until it is completely melted and combined with the rice.
  8. 8Serve the dairy-free dirty rice hot.
