Ingredients

  • 1 lb Ground pork
  • 1/2 lb Chicken livers
  • 1 medium Onion
  • 1 medium Bell pepper
  • 2 stalks Celery
  • 3 cloves Garlic
  • 2 tbsp Cajun seasoning
  • 4 cups Cooked rice
  • 1 cup Chicken broth
  • 2 tbsp Plant-based butter

Instructions

  1. 1Place a 12-inch skillet over medium heat (350°F / 175°C). Add the 2 tbsp of plant-based butter and let it melt.
  2. 2Add the 1 lb of ground pork and the 1/2 lb of chicken livers to the skillet. Cook, breaking up the meat with a spoon, until the pork is browned and the chicken livers are no longer pink, about 8-10 minutes.
  3. 3Add the 1 medium onion, 1 medium bell pepper, and 2 stalks of celery to the skillet. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
  4. 4Add the 3 cloves of garlic and 2 tbsp of Cajun seasoning to the skillet. Cook, stirring constantly, for 1 minute until fragrant.
  5. 5Pour in the 1 cup of chicken broth and stir to combine with the meat and vegetables. Bring the mixture to a simmer.
  6. 6Add the 4 cups of cooked rice to the skillet. Stir everything together until the rice is fully incorporated and heated through, about 5-7 minutes.
  7. 7Serve the dairy-free dirty rice hot.
