Ingredients

  • 1 lb Yuca
  • 2 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 cup Orange Juice
  • 2 tbsp Lime Juice
  • 4 cloves Garlic
  • 1 tsp Oregano
  • 2 tbsp Olive Oil

Instructions

  1. 1Preheat your oven to 400°F (200°C). Peel the 1 lb yuca and carefully cut it into sticks approximately 3-4 inches long and 1/2-inch thick, resembling french fries.
  2. 2In a large bowl, add the cut 1 lb yuca. Drizzle with 2 tbsp olive oil, then sprinkle with 1/2 tsp salt and 1/4 tsp black pepper. Toss everything together until the yuca is evenly coated.
  3. 3Arrange the seasoned yuca fries in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, flipping the fries halfway through the baking time, until they are golden brown and crispy.
  4. 4While the yuca bakes, prepare the mojo sauce. Mince the 4 cloves garlic. In a small bowl, combine the 1/4 cup orange juice, 2 tbsp lime juice, minced 4 cloves garlic, 1 tsp oregano, and 2 tbsp olive oil. Stir well to thoroughly combine all the ingredients for the mojo sauce.
  5. 5Serve the hot, baked yuca fries immediately with the prepared mojo sauce for dipping.
