Ingredients

  • 1 cup All-Purpose Flour
  • 2 tbsp Tapioca Starch
  • 1 tbsp Sugar
  • 1/4 tsp Salt
  • 1/4 cup Unsweetened Applesauce
  • 1 1/2 cups Dairy-Free Milk (Oat)
  • 1 cup Sunflower Seeds (Raw)
  • 1 tbsp Lemon Juice
  • 2 tbsp Agave Nectar
  • 1/2 tsp Vanilla Extract
  • 2 cups Mixed Berries (Fresh or Frozen)
  • 1 tbsp Chia Seeds
  • 2 tbsp Coconut Oil (for cooking)

Instructions

  1. 1In a large bowl, whisk together the 1 cup All-Purpose Flour, 2 tbsp Tapioca Starch, 1 tbsp Sugar, and 1/4 tsp Salt until combined. Add the 1/4 cup Unsweetened Applesauce and 1 1/2 cups Dairy-Free Milk (Oat) and whisk until the batter is smooth. Let the batter rest for 15 minutes.
  2. 2While the batter rests, place the 1 cup Sunflower Seeds (Raw) in a heatproof bowl and cover with hot water. Let them soak for at least 30 minutes. Drain the sunflower seeds and rinse them well.
  3. 3Combine the drained sunflower seeds with 1 tbsp Lemon Juice, 2 tbsp Agave Nectar, and 1/2 tsp Vanilla Extract in a blender. Blend until the mixture is smooth and creamy. If the mixture is too thick, add a tablespoon of water at a time until it reaches a thick, spreadable consistency.
  4. 4In a medium saucepan, combine the 2 cups Mixed Berries (Fresh or Frozen) and 1 tbsp Chia Seeds. Cook over medium heat (350°F / 175°C), stirring occasionally, for about 10 minutes. The berries should soften and the sauce should thicken.
  5. 5Heat 1 tbsp of Coconut Oil in a non-stick skillet or on a griddle over medium heat (350°F / 175°C). Once the oil is shimmering, pour 1/4 cup of the rested batter onto the hot surface. Swirl the pan to spread the batter into a thin circle, about 8 inches in diameter. Cook for 2-3 minutes, until the edges look set and the underside is golden brown. Carefully flip the palacsinta and cook for another 2-3 minutes on the other side until golden brown.
  6. 6Repeat step 5 with the remaining batter, adding the remaining 1 tbsp Coconut Oil to the pan as needed. You should have about 4 palacsintas.
  7. 7To serve, place a generous spoonful of the dairy-free cottage cheese mixture onto each palacsinta. Fold or roll up the palacsinta. Serve warm, topped with the berry compote.
