Dairy-Free Cornmeal Pap (Akamu/Ogi)

Ingredients

  • 1/2 cup Cornmeal (Akamu/Ogi)
  • 2 cups Water
  • 2 tbsp Sugar
  • 1/4 cup Evaporated Milk (Dairy-Free)
  • 1/4 cup Coconut Evaporated Milk

Instructions

  1. 1In a medium bowl, combine the 1/2 cup cornmeal with 1/2 cup of the cold water. Stir until it forms a smooth paste with no lumps.
  2. 2Pour the remaining 1 1/2 cups of water into a large, heavy-bottomed pot. Bring the water to a rolling boil over high heat, about 5-7 minutes. The water should be bubbling vigorously.
  3. 3While whisking the boiling water constantly, slowly pour the cornmeal paste into the pot. Continue to whisk vigorously for 1 minute to ensure the paste is fully incorporated and to prevent lumps from forming.
  4. 4Reduce the heat to medium-low. Continue to cook, stirring constantly with a whisk or wooden spoon, for 10-12 minutes. The pap is ready when it has thickened to a creamy, porridge-like consistency and has a slightly glossy appearance.
  5. 5Stir in the 2 tablespoons of sugar until fully dissolved. Then, stir in the 1/4 cup dairy-free evaporated milk and the 1/4 cup coconut evaporated milk until well combined.
  6. 6Serve the dairy-free cornmeal pap warm.
