Ingredients

  • 1 1/2 cups Dairy-free milk (almond, soy, or oat)
  • 3 large Eggs
  • 1/2 cup Sugar
  • 1/2 cup All-purpose flour
  • 1 teaspoon Vanilla extract
  • 2 cups Pitted cherries, fresh or frozen
  • 1 tablespoon Vegan butter, for greasing
  • 1 tablespoon Powdered sugar, for dusting

Instructions

  1. 1Preheat your oven to 375°F (190°C). Use the 1 tablespoon of vegan butter to thoroughly grease a 9-inch baking dish.
  2. 2In a blender or a large mixing bowl, combine the 1 1/2 cups of dairy-free milk, 3 large eggs, 1/2 cup of sugar, 1/2 cup of all-purpose flour, and 1 teaspoon of vanilla extract. Blend or whisk until the batter is completely smooth with no lumps.
  3. 3Pour the prepared batter into the greased 9-inch baking dish. Evenly scatter the 2 cups of pitted cherries over the top of the batter.
  4. 4Bake for 35 to 40 minutes in the preheated oven, or until the clafoutis is puffed up and golden brown around the edges. To check for doneness, carefully insert a knife near the center; it should come out clean.
  5. 5Let the clafoutis cool slightly in the baking dish for at least 10-15 minutes before serving. Just before serving, dust the top evenly with the 1 tablespoon of powdered sugar.
