Ingredients

  • 1 cup Water
  • 2 tbsp Olive Oil
  • 1/4 tsp Salt
  • 1 cup All-Purpose Flour
  • 3 cups Vegetable Oil (for frying)
  • 1/2 cup Sugar (for coating)
  • 1 tsp Cinnamon (for coating)
  • 1 cup Dairy-Free Chocolate Chips
  • 1/2 cup Coconut Milk

Instructions

  1. 1In a medium saucepan, combine the 1 cup of Water, 2 tablespoons of Olive Oil, and 1/4 teaspoon of Salt. Bring this mixture to a rolling boil over medium-high heat.
  2. 2Remove the saucepan from the heat immediately. Add the 1 cup of All-Purpose Flour all at once and stir vigorously with a wooden spoon until a smooth dough forms and pulls away from the sides of the pan. This should take about 1 minute.
  3. 3While the dough rests briefly, prepare for frying. Pour the 3 cups of Vegetable Oil into a large, heavy-bottomed pot or deep fryer. Heat the oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.
  4. 4Transfer the dough to a piping bag fitted with a large star tip. Carefully pipe strips of dough, about 4 inches long, directly into the hot 350°F (175°C) vegetable oil. Do not overcrowd the pot; fry in batches if necessary. Fry the churros for 2-3 minutes per side, until they are a deep golden brown and feel crispy to the touch. They should float and puff up slightly.
  5. 5Using a slotted spoon or spider strainer, carefully remove the fried churros from the hot oil. Place them on a plate lined with paper towels to drain any excess oil. Let them cool for a minute or two.
  6. 6In a shallow bowl, mix together the 1/2 cup of Sugar and 1 teaspoon of Cinnamon. While the churros are still warm, gently roll them in the sugar-cinnamon mixture until they are evenly coated.
  7. 7To make the dairy-free chocolate sauce, place the 1 cup of Dairy-Free Chocolate Chips and 1/2 cup of Coconut Milk in a heatproof bowl. Set this bowl over a saucepan of simmering water (a double boiler) or microwave in 30-second intervals, stirring after each. Continue heating and stirring until the chocolate chips are completely melted and the sauce is smooth and glossy.
  8. 8Serve the warm, cinnamon-sugar coated churros immediately with the warm dairy-free chocolate sauce for dipping.
